We are looking for a
COO
who can design, build and scale the full operational structure of our Italian restaurant concept. This role requires a hands-on leader with deep industry expertise, the ability to create processes from scratch, and the operational discipline to ensure every location runs with excellence and consistency.

Key Responsibilities

  • Build end-to-end restaurant operations from the ground up: service standards, kitchen–service flow, staffing models, procurement, quality, and performance management.
  • Establish and standardize operational processes, ensuring efficiency, scalability, and consistency across all locations.
  • Lead daily operations, staying close to the field and ensuring seamless execution.
  • Define, track and improve operational KPIs, driving continuous optimization.
  • Oversee operational setup for new openings, including pre-opening workflows, team readiness and implementation of brand standards.
  • Structure and develop operational teams, ensuring capability, accountability and alignment.
  • Collaborate closely with the CEO to translate growth strategies into operational reality.

Qualifications

  • Minimum 15 years of experience in the food & beverage sector
    (preferably with Italian restaurant operations).
  • At least 5 years of senior management experience
    with proven operational leadership.
  • Demonstrated track record of setting up or restructuring restaurant operations from scratch.
  • Advanced English is required; Russian is strongly preferred.
  • Strong analytical mindset with the ability to design systems, workflows and monitoring structures.
  • Hands-on, pragmatic and solution-oriented leadership style.
  • Experience managing multi-location operations with high service standards.
  • Ability to operate effectively in a fast-paced, high-demand environment.
